It is produced with 65% deer meat and other selected ingredients: extra virgin olive oil from the hills near Pisa, salt from the Volterra salt pans, Italian tomato. The ragù is produced artisanally with care: lightly browned onions, garlic and herbs in extra virgin olive oil and other natural ingredients; long slow cooking, adding finely chopped tomatoes. The deer ragù is great for seasoning pasta – just pour it over hot pasta – and over toasted bread.
