It is produced with 65% of duck meat and other selected ingredients: extra virgin olive oil from the hills near Pisa, salt from the Volterra salt pans, Italian tomato. The ragù is produced artisanally: lightly browned onions, garlic and herbs in extra virgin olive oil, orange zest and other natural ingredients; long slow cooking, adding finely chopped tomatoes. The duck ragù ‘I Selvatici’ is tasty and slightly sweet.
